Zucchini, belonging to the Cucurbitaceae family and scientifically classified as Cucurbita pepo, is a vegetable characterized by its elongated shape and bright green skin. Typically ranging from 15 to 25 centimeters in length, zucchini has a tender texture and juicy flesh. The zucchini plant is known for its palmate leaves and yellow flowers that bloom during the growing period.
Zucchinis are a low-calorie food due to their high water content (94%) and very low percentage of lipids and proteins. They are low in sodium and rich in vitamins A, B1, B2, C, and PP. They also contain a good amount of minerals, especially calcium, iron, phosphorus, and potassium. The skin, which is often mistakenly discarded, is an excellent source of folic acid and carotenoids.
Zucchinis are produced from September to June on an area of approximately 70 hectares divided between open fields and greenhouses in different cultivation cycles.
Zucchinis harvested from January to June are grown in greenhouses with transplants starting from early November; the maturation and harvesting time is about 50/60 days from transplantation, and the plant’s cultivation cycle is about 7 months. This type of cultivation cycle spans the winter period, and to protect against the cold, greenhouses are thawed by lifting and circulating water over the greenhouse roof.
Zucchinis harvested from September to December, on the other hand, are transplanted starting from July in open fields and in September in greenhouses. The maturation time is about 30 days, and the cultivation cycle is reduced to a maximum of 3 months.
The annual production is about 40,000 quintals of zucchinis.
Zucchinis are harvested by cutting the peduncle from the plant, either by hand or with cutting tools, and after harvesting, they are transferred to the processing center. In recent years, innovative packaging such as cardboard and special packaging have become popular according to customer requests.
